Description
Puffy, chewy-inside, and lightly crisp โ classic chole-bhature bread you can nail at home ๐ซถ๐ฅ.

Ingredients
- ๐พ All-purpose flour: 360 g (3 cups / 12.7 oz)
- ๐ง Fine salt: 6 g (1 tsp / 0.21 oz)
- ๐ฌ Sugar: 8 g (2 tsp / 0.28 oz)
- ๐ฅ Baking powder: 3 g (ยฝ tsp / 0.11 oz)
- ๐ฅ Plain yogurt (room temp): 120 g (ยฝ cup / 4.2 oz)
- ๐ฅ Milk or water (lukewarm): 150โ170 ml (โ
โยพ cup / 5โ6 fl oz)
- ๐ง Neutral oil or melted ghee (for dough): 15 ml (1 tbsp / 0.5 fl oz)
- ๐พ Fine semolina (sooji, optional for structure): 20 g (2 tbsp / 0.7 oz)
- ๐ข Neutral oil for deep-frying
Preparation
- 1๏ธโฃ Make dough: Whisk flour, salt, sugar, baking powder (and semolina if using). Add yogurt, then milk/water gradually with oil to form a soft, slightly tacky dough.
- 2๏ธโฃ Knead & rest: Knead 8โ10 min until smooth. Cover and rest 60โ90 min (dough relaxes and puffs slightly).
- 3๏ธโฃ Portion & roll: Divide into 10โ12 balls. Rest 10 min. Roll each to 14โ15 cm (5ยฝโ6 in) rounds, 3โ4 mm thick; keep covered so they donโt dry.
- 4๏ธโฃ Fry: Heat oil to 185โ190ยฐC (365โ375ยฐF). Slide in one round; gently splash hot oil over the top โ it should puff in 5โ7 s. Flip and fry 10โ15 s more to pale golden. Drain on a rack.
- 5๏ธโฃ Serve immediately with Chole (chickpea curry) or any curry and pickle.
