Description
π§ Light, colorful, and playfully textured β Anmitsu is a traditional Japanese dessert made with kanten jelly, sweet azuki bean paste, and fresh fruit. It's a refreshing summer treat thatβs both beautiful to serve and joyful to eat. Perfect for mindful indulgence or entertaining guests! πΈ
Ingredients
- π΅ 1 tsp agar agar powder
- π§ 300 ml (1 1/4 cups) water
- π¬ 1 tbsp sugar
- π 1/2 cup (75 g) strawberries or seasonal fruit, diced
- π 1/2 cup (75 g) canned peaches or mandarin oranges
- π« 100 g (3.5 oz) anko (sweet red bean paste)
- π― 2 tbsp kuromitsu (Japanese black sugar syrup) (or use dark molasses)
- π¦ Optional: small scoop of vanilla or matcha ice cream
Preparation
- 1οΈβ£ Dissolve agar agar powder and sugar in water over medium heat.
- 2οΈβ£ Bring to a boil, stirring continuously, then simmer for 2 minutes.
- 3οΈβ£ Pour into a shallow container and let it cool until firm (about 30 min).
- 4οΈβ£ Cut the jelly into cubes once set.
- 5οΈβ£ Arrange the cubes in bowls with fruits, anko, and a drizzle of kuromitsu.
- 6οΈβ£ Top optionally with a scoop of ice cream before serving.
