Ingredients
- ๐ Firm fish fillets (cod/halibut/snapper/kingfish), 3โ4 cm chunks: 700 g (1.5 lb)
- ๐ Lemon juice: 20 ml (4 tsp / 0.68 fl oz)
- ๐ง Salt: 1 tsp (6 g / 0.21 oz)
- Tandoori marinade
- ๐ฅ Thick yogurt (Greek/hung curd): 150 g (โ
cup / 5.3 oz)
- ๐ซ Gingerโgarlic paste: 20 g (1 tbsp + 1 tsp / 0.7 oz)
- ๐ถ Kashmiri chili powder (mild, color): 2 tsp (6 g / 0.21 oz)
- ๐ Turmeric: ยผ tsp (0.8 g)
- ๐ฟ Ground coriander: 1 tsp (3 g)
- ๐ฑ Cumin powder: 1 tsp (3 g)
- ๐ฟ Garam masala: ยฝ tsp (1.5 g)
- ๐ง Mustard oil or neutral oil: 1 tbsp (15 ml / 0.5 fl oz)
- ๐ง Salt: ยฝ tsp (3 g)
- ๐ชต Skewers (optional), soaked 15 min
Preparation
- 1๏ธโฃ Marinate: Pat-dry ๐ fish. Toss with ๐ lemon + ๐ง salt. Whisk marinade smooth; coat fish. Rest 15โ30 min (fridge).
- 2๏ธโฃ Arrange: Thread on skewers or place on a lined rack over a tray.
- 3๏ธโฃ Roast: Preheat oven to 230 ยฐC / 450 ยฐF (grill HIGH). Roast 10โ12 min, turning once, until just cooked.
- 4๏ธโฃ Char & finish: Broil 1โ2 min for light char. Rest 2 min; brush with a touch of ๐ง oil/ghee. Serve with lemon wedges + MintโCoriander Chutney.
