Description

This stew tastes like Sunday silence and soft slippers. It’s the kind of meal monks might eat after a long day of thinking deep thoughts… or you, after a long day of dodging responsibilities. Simple, filling, and full of gentle flavor.

Ingredients

  • 🥔 4 medium potatoes, peeled and cubed
  • 🧅 1 large onion, finely chopped
  • 🥕 1 carrot, sliced
  • 🧄 2 garlic cloves, minced
  • 🍅 2 tbsp tomato paste
  • 🫒 4 tbsp olive oil
  • 🌿 1 bay leaf
  • 🧂 Salt & pepper to taste
  • 💧 600ml water

Preparation

  • 1️⃣ Heat olive oil in a pot and sauté onions until translucent.
  • 2️⃣ Add garlic and carrot, cook for 2–3 minutes.
  • 3️⃣ Stir in tomato paste and cook for 1 minute.
  • 4️⃣ Add potatoes, bay leaf, salt, pepper, and water.
  • 5️⃣ Bring to a boil, then reduce heat and simmer until potatoes are tender (20–25 min).
  • 6️⃣ Optional: mash a few potato chunks to thicken the stew.

Advice

Tastes even better the next day. Serve with pickles or a slice of crusty bread, if you’re not on full monk mode.
