Preparation

• 🍪 Crush the biscuits into fine crumbs and mix with melted butter.
• 🥣 Press the mixture firmly into the base of a springform pan. Chill in the fridge while preparing the filling.
• 🧀 In a bowl, beat cream cheese, sugar, lemon juice, lemon zest, and vanilla until smooth.
• 🥛 Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
• 🍋 Pour the filling over the chilled crust and smooth the top.
